Colton Soelberg is the co-founder and was the co-owner of Heirloom Group, the owner of various restaurants. He started in the business as a busboy and quickly moved through the ranks to line cook. He landed a position at the Sundance resort. He was then a cook at Midway, Utah’s Inn on the Creek, New York City’s La Côte Basque, and San Francisco’s Le Petit Robert.

When he returned to Utah, he was named chef of the Tree Room at Sundance, where he met Joseph McRae and the two formed Heirloom Group. Their first restaurant was Pizzeria 712, which they opened in 2007. Communal, Mountain West Burrito, Heirloom Cafeteria Company, and Heirloom Catering followed.

Soelberg left Heirloom to open CHOM Burger and to have more time with his wife and children. Heirloom Restaurant Group was sold and then restructured, and Soelberg, McRae, and other top Utah Valley restaurant owners became part of the group.[1]

Soelberg was born in Provo, Utah. He is a member of The Church of Jesus Christ of Latter-day Saints.
